Christmas Recipe 2010: Morcon

Every year on Christmas, I try to cook something for the first time..Just a small tradition that I've been doing at least for the last 3 years. In the past, I've done Carbonara, Fudge Brownies, Kare-kareng buntot and an authentic Kaldereta ( i.e., no ready-kaldereta mix used).

This year, I'm cooking Morcon, a Filipino meat roll stuffed with sausage or hotdogs, carrots, pickles, cheese, and egg.

Here's the recipe I found on the net: (though I did some variations I will mention below)

Ingredients:

2 lbs beef eye of round or flank steak, 3/4 inch thick in one piece
2 pieces beef cubes dissolved in 3 cups boiling water (beef stock/broth)
1/4 tsp salt
1 piece lemon
1/2 cup soy sauce
1 piece medium sized carrot, cut into long strips
1/2 cup flour
1/2 cup cooking oil
4 pieces hotdogs, cut in half lengthwise
2 pieces pickled dill or sweet pickled cucumber, cut lengthwise divided into 4 equal pieces
3 pieces hard boiled eggs, sliced
3 ounces cheddar cheese, cut in strips (about 1/2 inch thick)

Optional:

2 cans of 240 ml. Pineapple Juice

Cooking procedure:

1. Marinate the beef in soy sauce and lemon juice for at least 1 hour. (For the marinade, I used a ready-made mix)
2. Place the beef in a flat surface and arrange the hotdogs, pickle, carrot, cheese, and egg on one side ( I skipped the pickle because my wife is not a big fan of it)
3. Roll the beef enclosing the fillings and tie with a cooking string to ensure that the meat will not open-up
4. Place cooking oil in a pan and apply heat
5. Dredge the rolled beef in flour and fry until the color of the outer part turns medium brown
6. Transfer the fried rolled beef in a casserole and pour-in the beef broth then bring to a boil
7. Pour-in half of the soy sauce-lemon juice marinade,salt and simmer until the beef is tender, about 2 hours using ordinary casserole or 30 minutes if a pressure cooker is used. (For this dish, I decided to use 2 cans of Pineapple Juice for a little twist, the remaining marinade and 2 beef cubes.)
8. Optional: Fry the simmered meat for at least 2 minutes
9. Remove the strings and slice into serving pieces
10. Place in a serving dish and add the sauce.
11.Serve hot. Share and enjoy!

Exchanged Gift


Yesterday, Dec. 17, me and my wife went out to buy a gift for Cianna's exchange gift, something suitable for either a boy or girl..We spent about two hours searching for the best gift until we decided on something we both liked - a Scrabble-inspired Math Board game..I actually liked it very much that I almost bought another one for Cianna herself..Good thing, my wife said no..

Mommy then prepared and wrapped it in a nice paper bag with the words " Merry Christmas and Happy New Year!From Cianna Mercado " written on it.

So our little girl went to the party this morning..After a few hours, she arrived home happy.....and still with the same gift in hand but now with the number 15 on it.

Naturally, Mommy was surprised and asked her why she still has the gift.  Did she take the same number of her own gift and not bother to inform her teacher about it?..She didn't get a clear answer from her so she asked me to call the teacher and ask about it.

We figured out, when the gift-giving was over, the children went on to play and have fun..When its time to go, the teacher told them to get their things and prepare to go home.. Cianna must have gathered her things ( like she always do)...AND INCLUDING HER GIFT!

So now, Cianna ended up with a very nice present--something we chose carefully, something her mommy and I both liked, something I like for her to have...

and some other child is looking for her gift at school :)

Mercado Family Get Together

One of the best, if not the best, things that happened during our recent vacation to the Philippines is to finally have that rare chance for our family to be complete again.. Yes, we may be just a small family but because I had to be away most of the time, and even my youngest brod, Mon has to leave the country also,  we hardly had  the opportunity to be together again...I mean, all of us- me and my brothers, our respective wives and all of our children- all in one place and eat, talk, play and just have fun...So we thank the good Lord we finally have this chance this year..I know Tatay and Nanay couldn't be happier..we hope to do it again soon!

Happy 2nd Birthday Zoe


My daughter Zoe is one very active toddler- she's always on the go..she never runs out of energy.. always up to something..climbing, jumping, running around the house..Her hands are so quick, we cant take our eyes away from her even for just a second or she'd already have grab something..the bad part of it is that she destroys everything she lay her hands on..toys, food, Mommy's cosmetics, her sister's school things..those are her usual victims..but it's fine, that's normal at her age I guess..

she's also an active eater..she doesn't need to be called during meal time-she's already on her chair even before the table is set!..she demands her own plate and eats on her own...and she never seems to stop eating.

She's very picky when it comes to dresses--she prefers "sexy" clothes at daytime and only agress to wear pajamas when its night time..try to put a simple shirt and shorts on her after her morning bath and chances are she will refuse..or even if you succeed, she will eventually take them off in no time..

But she's a very loving girl- she never fails to say "ababoo" ( I Love you) before we sleep..she always got a welcome smile and hug everytime me and mommy come home..she's very thoughful too, she'd take my shoes back to the shoerack as soon as I remove them and offer me my slippers before saying "I win!"(that's her way of saying she's good hehe)..she'd even fight with her ate Cianna to get my shirts off the drawer..

Well,that's our little girl..the darling of the family...that's our lovable Zoe..and she's 2 years old today.We thank the Lord for this day and we pray that you continue to grow as sweet, lovable and thoughful as you are..We love you, Baby Zoe..Happy Birthday!

Wow sikat na naman ang Pinoy..hindi dahil sa sports o sa kantahan o sa entablado, kundi dahil sa isa na namang kahihiyang ginawa nitong isang sira-ulong pulis..


At ang mas lalong nakakahiya ay kung paano ini-handle ng Philippine Police force ang sitwasyon..kitang-kita hindi lamang ng buong Pilipinas kundi pati na rin ng buong mundo ang mga kapalpakan sa tactics at kawalan ng proper training, at equipment ng mga pulis..tsk tsk..

Maski ang media, may partisipasyon din sa mga kaganapan ngayong araw na ito...para silang piyesta sa pag-cover at pagkuha ng lahat ng anggulo ng balita..oo nga trabaho nila yun..responsibilidad nila sa mamamayan na maiparating ang mga nagaganap..pero sana lang naging mas maingat sila sa paglalabas ng impormasyon.

Ilang araw pang magpipiyesta ang media sa balitang ito..mahaba-habang usapan pa, kabi-kabilang turuan at sisihan..malamang makialam pati ang ating magagaling na Senado at Kongreso, imbestigasyon doon, hearing dito..tutukan ng taumbayan ito..tutukan din ng foreign media..sana sa bandang huli, wag namang mauwi rin lang uli sa wala, mabaon sa limot pag may dumating na ulit mas bago at maingay na balita..

It is a really a tragedy for the Filipino people, not because of how it ended but how everything transpired..bagsak na bagsak na nga ang image ng Pinas sa buong mundo dahil sa mga nakaraang iskandalo tapos eto na naman..masaklap pa nito e damay pa ang mga taga-ibang bansa..laglag din ang turismo nito..

This is my Tatay's pic I submitted and shared in Definitely Filipino's Facebook Page: " Ako Noon, Ako Ngayon Part II" Album..The 2010 pic was taken just recently on his 62nd birthday..The pose was purely coincidental, I just noticed the similarity in one of their old photos from my aunt's collection..

I am surprised and glad as well that a lot of people liked this and have shared positive and kind comments.. I particularly liked one of the comments from the page which says " he must be so contented with his life"..

I am just so proud of my Tatay, he never really changed even after all  these years..I mean, his outlook in life, his friendly manner, his love for the family and his faith in God..they must have reflected on how he has aged through the years..Indeed, he really must be so contented with his life, our life..

Wowowee No More


No more Wowowee from today..sad but true..except for its main host, WIllie, the show is a joy to watch..lalo na sa mga gaya kong working abroad..pagkagaling sa work, siempre masarap magrelax lang sa bahay, manood ng TV with the family..manood ng game shows, gag shows, pati teleserye..tumawa, mag-enjoy, minsan malungkot..

Isa sa mga madalas na panoorin sa hapon dito yung Wowowee..nakikita namin ang buhay ng ibang tao thru the show, natatawa, humahanga sa mga talents ng mga ordinaryong tao, natutuwang may mga nabago ang buhay sa isang iglap...ganun ang Wowowee..pero siempre, sabi nga, some good things never last..sabagay, nakakasawa na rin naman yun show..lalo na nung andun pa si Wil..sobrang predictable na..promote ng kanta at products nya, puro sya di ba? kaya siguro nagmalaki na rin si loko..

Anyway, Thank you Wowowee..Thank you for the fun..it was good while it lasts.

MANILA, Philippines - After five years on the air, the country’s hit noontime TV show on ABS-CBN, Wowowee, finally bade viewers goodbye.
On Friday, July 30, the most controversial afternoon program mounted its last show without its main host, Willie Revillame.
For a long time, the show gave its best to give joy and happiness to Filipinos here and abroad with its main female co-hosts Mariel Rodriguez, Valerie Concepcion and Pokwang.
But like any show, Wowowee wasn’t spared from controversies.
Below is the timeline of Wowowee’s history.
February 5, 2005: Wowowee aired its first show. The game show was seen on TV on weekdays and Saturdays since then.
February 4, 2006: ULTRA stampede. Wowowee decided to hold its first anniversary show at Philsports Arena (ULTRA) in Pasig City. The stampede claimed the lives of 71 fans and supporters.
October 19, 2006: The Department of Justice (DOJ), through its five-member panel, recommended that charges of reckless imprudence resulting in multiple homicide and physical injuries be filed against 17 ABS-CBN executives and employees in connection with the deadly ULTRA stampede.
May 12, 2007: Wowowee got a 3-day suspension after young actress Eda Nolan had a wardrobe malfunction while the show was airing.
January 29, 2008: The Supreme Court (SC) affirmed the authority of the Department of Justice (DOJ) to conduct an investigation into the alleged link of some ABS-CBN executives to the ULTRA stampede.
August 3, 2009: Revillame asked that the airing of former President Corazon "Cory" Aquino’s funeral cortege from La Salle Greenhills to Manila Cathedral be stopped. The footage was being beamed live simultaneously and shown as an inset on the screen on the noontime show. His actions drew flak, and Revillame was even asked by some people, particularly Aquino supporters, to resign from the show.
August 4, 2009: Revillame apologized on TV after he drew criticism for ordering the removal of the live streaming on Wowowee of former President Corazon Aquino’s funeral procession.
August 10, 2009: ABS-CBN Corporate Communication head Bong Osorio bared that Revillame was on leave “indefinitely” as a result of the controversy generated by Revillame's order to stop the airing of President Corazon Aquino's funeral procession on Wowowee.
September 21, 2009: Revillame made a triumphant return to Wowowee, six weeks after going on indefinite leave.
May 4, 2010: Revillame slammed Sucaldito for the latter’s alleged nonstop criticisms. Revillame, in particular, got irked after Sucaldito allegedly insulted the contestants of Wowowee. The contestants were reportedly high school students with general averages of between 75 and 79. Sucaldito repeatedly denied that he insulted the Wowowee contestants. Revillame demanded that the network fire Sucaldito or else he will leave the network.
May 5, 2010: Revillame failed to report for Wowowee.
May 12, 2010: Revillame gave a letter to the bosses of the Kapamilya network asking that he be released from his contract.
May 15, 2010: Robin Padilla joined Wowowee as its first male guest co-host after Revillame went on indefinite break.
May 25, 2010: ABS-CBN management announced that Revillame is taking an "indefinite break."
May 29, 2010: Kanto Boys (John Lloyd Cruz, Billy Crawford and Luis Manzano) took over Padilla’s hosting job.
June 3, 2010: Cesar Montano hosted Wowoweeas guest co-host. He stayed in the show for just one week.
June 12, 2010: DOJ dismissed the charges against Revillame in connection with the 2006 ULTRA stampede.
July 27, 2010: ABS-CBN announced the end of Wowowee.It revealed that its replacement will be "Pilipinas, Win na Win" to be hosted by Mariel Rodriguez, Valerie Concepcion, Robin Padilla and presidential sister Kris Aquino.
July 30, 2010: Wowowee bids goodbye.

My doctor advised me to include berries in my diet..fresh berries..even berry juice..as they are good in lowering uric acid in the body. So tonight, we went out to buy some berries, loads and loads of them...strawberries, blueberries......

Another Bout with the Gout

I was having another bout with the gout so I decided to go to a clinic and have it checked once and for all..inside the doctor's clinic,  this is how our "consultation" took place: ( note: majority of the convo was in arabic with minimal English here and there..but I'm gonna write it here in English for my sanity's sake :))


doctor: what's the problem?


me: I'm having pain on my big toe because of uric I believe.

doctor: What medicine you used to take?


me:  "this uric-reducing med" and "that anti-inflammatory" I said. ( I won't mention the meds, unless I wanna get paid for advertisement hehe)

doctor: what dosage?


me: one tablet 2x a day..the other one, one tablet 3x a day.

doctor: how about " that lipid-reducing agent", have you tried?


me: yes. once before.

doctor: ok, you can now go to the pharmacy to collect your medicines.


me: huh? ok..thank you.


buti pa pala dumiretso na lang ako sa pharmacy, parang ako rin nagreseta sa sarili ko e hehehe..


and yes, this is not the first time I experience this kind of "consultation" here in government health centers, I've been through a lot before..and I mean A LOT!..but I won't go into details now unless I want to feel sick all over again..:))

The HEAT is on...

So now, after years of team preparations and anxiety, the most anticipated free agency period in NBA history  is over ..it's official..the Summer of Lebron becomes a year-long summer party in Miami as he joins my other favorite player (after KB24!), D-Wade and also Chris Bosh (formerly of Toronto) in forming a new triumvirate in the East..wtf..after all those salary cap clearances and elbowing for position by NY, New Jersey and Chicago and of course Cleveland, the silent Miami edged them all!

I think he's been leaning towards Miami even before..when he announced he's changing his jersey number to 6..he said he's doing that as a respect to Michael Jordan as the only rightful owner of Number 23..but actually, the number has been retired, not only in Chicago where MJ played but also in Miami, where the Heat retired it in Mj's honor.

Poor Cleveland..once again, they've been bertrayed..but I bet this one's gotta hurt the most as LBJ is their very own son.. the team built a city around him..the city built a dream around him..and now the Cavs are left with just bit and pieces of that once glorious dream...he's gone somewhere else...to realize his own dream, to try to win a championship for himself, not for the city who loved him no end...not to seek help, but to give help to someone else...not in that championship-starved city of Cleveland..their most favorite son, their most famous personality suddenly became their worst adversary..I can't blame them if they hate him..one report even showed an angry fan burning his no.23 jersey..

While in the sunny state of Miami, the fans are rejoicing, partying and maybe already dreaming of another championship parade with Latino music blaring along Biscayne Boulevard.

Pat Riley ends up the winner of this grand lottery by getting the Top Three free agents to Miami..yes, it's a Fantasy team for the ages, but it's still not a guarantee the team can win it all come June 2011..there's still a lot of work to be done before they can be called Championship contenders..they've practically cleared up their whole roster to make this blockbuster deal a reality..And now that the major pieces are in place, the daunting task of assembling their supporting cast still lies ahead. They've to find bit players who'd be willing to get minimum salaries as majority of their salary cap will already be taken by the three superstars..

Now, Kobe, Phil and the Laker's quest for a second 3-peat becomes more challenging.....albeit exciting!..

Let's get this party started!

Feeling Guilty Over A Cup of Coleslaw..



Nung isang araw pa ako naglalaway sa KFC..para bang di nakakatikim ng chicken 8 days a week sus. So kagabi, finally natupad nga (yey!). We had KFC for dinner. 2 piece meal ang kay misis, 3 piece naman sa akin...may kasama ng bread, fries at drinks pero yun sa akin lang me coleslaw. Siempre Take-out as usual, mas masarap kumain sa bahay e.

So ayun nga, habang nilalantakan namin ang mga kawawang breasts, legs at thighs ay sige naman kami panonood ng TV..(sarap-buhay noh). Nauna kong naubos ang akin (ay 3 piece ba? hehehe)..Kaya binalingan ko na ang aking coleslaw..Usap..kain..nood..di ko namamalayan, naubos ko na ang coleslaw...

Dun na nagreact ang aking asawa.." Ay, ubos na, di mo man lang ako inalok? nakaisang subo pa lang ako dun a" sabay maktol kunyari....

Awwww..

Abot-abot ang sorry ko..nalibang talaga ako sa pagkain at panonood..

Sabi pa nya, " Hmph, samantalang ako, ultimo isusubo ko na, hinahati ko pa para ibigay sa yo "..ayan na, kahit tatawa-tawa yan, alam ko tinototoo na nya..

Then narealize ko, oo nga tama sya..ganun nga sya, maski ano kinakain nyan, magtitira at magtitira para sa akin..o kaya hinahatian ako parati..maski yung ulam na kasya lang sa kanya, ititira pa nun for me kasi alam nya maghahanap ako ng makakain pagkagaling sa work...na-guilty na talaga ako...

Sabi ko na lang, sige bukas pasalubungan kita ng large coleslaw ha...oo daw..

"Gusto ko sa Popeye's ha? mas masarap coleslaw dun...."  

Kaya mamaya, chicken ulit kami..pero kanya na yung coleslaw..:D

Some guys have all the luck..


I am telling you, man, some guys just have all the luck!

I am talking about Lamar Odom of the Lakers..I mean, his team just won the NBA Championship, okay?..and of course, everyone knows he's got one HOT girl for a wife..

But listen to this, that same HOT wife just gave him a brand new 2010 Rolls Royce, drop-top coupe, white on white..as a congratulatory gift!...The perks of being famous, huh?

I mean, I didn't even get anything last Father's Day!!!

yeah, yeah...I don't want anything anyway :)..its enough that I have a loving wife and the most beautiful kids in this world..that's the best gift already.

Though a Rolls Royce definitely won't hurt sometimes...Lol!

Lakers are 2010 NBA Champions..wohoo!



Revenge is oh so sweet..sa wakas!

The Los Angeles Lakers are back-to-back champions after beating their longtime rival, Boston Celtics in Game 7 of the NBA Finals, 83-79. After trailing by 3 1/2 quarters, LA finally reclaimed the lead midway in the fourth quarter and never looked back despite a last stand from the Celtics.

Kobe Bryant, struggling all night, was named Finals MVP for the 2nd year, but it was his team mates, Pau Gasol, Lamar Odom, Derek Fisher and their newest addition, Ron Artest who won this one for him. They made big plays down the stretch...I mean, huge plays..Pau with his free throws, offensive rebounding and blocks..Odom with a couple of follow-up shots..Artest with his defense on Paul Pierce and his offensive game going, not-to-mention that huge three point shot with 1:02 to silence Celtic's own rally.

But I think, it's Fisher's three pointer with 6:12 remaining to tie the game at 64 apiece that turned the game around..Yes, Mr. Clutch Fisher hitting one big shot yet again to make the difference..

It energizes the crowd..it disrupts Celtics momentum..and most importantly, it relieves Kobe of his game-long agony..after that play, everything just went LA way.

Ah, this must be so sweet..not only did they get their revenge for that 2008's embarrassing loss, they also got to beat Celtics, their greatest rival, in a Game 7..that's something special for Kobe also..He further cemented his stature as one of the Laker's greatest, and he accomplished something even Magic Johnson and Jerry West failed to do: win over Celtics in a Game 7 of the Finals.

Phil now got his 11th championship as head coach, the most by any coach in all of professional sports..perhaps another one next year..c'mon, Phil..4th three-peat before you finally call it quits..now that'd be really awesome for the books!

Kobe now has 5, that's a handful of rings (are you watching, Lebron?)..one more to tie MJ wohoo!

Pau ( Viva Espana!) has got 2 championships in 3 Finals appearance with the Lakers, not bad eh?..Fisher also got 5. Odom got his 2nd..and Artest, got his wish..his 1st.

So now, I must say to all the Lakers fans out there..pop the champagne..it's raining purple and gold right now.

and as Kobe said, " Let's go for it again!"

Lakers easily forced Game 7 with a rout..yey!

Boston and LA, get ready to rumble..the NBA Finals is going to Game 7 for the first time since 2005. Winner take all..

This is definitely another epic Celtics-Lakers battle. Who will win on Thursday (Friday morning, Kuwait)? I can only keep my fingers crossed..lets wait and see.
